Day 3 of My Reboot

Whew….What a day!

It started off okay….Juice was done in no time thanks to prep work done yesterday and I was out the door to work EARLY!  Imagine that!  🙂

Work was…well…Work.  I thought I was through with a project and upon validation, found a problem.  So, I had to redo it….Sigh.

All that kinda put a kink in my food plan in that I got so busy this afternoon that I didn’t take time out to eat all my fruits and veggies.  Note to self….Take a break!  

On a lighter note, I did make some AWESOME soup yesterday.  I took Green Detox Soup and a salad for lunch today.  

Here’s the recipes:

Green Detox Soup

This recipe makes 4 servings

  • 2 Tbsp olive oil
  • 1 leek
  • 2 cloves garlic
  • 1 small head of broccoli
  • 6 kale leaves
  • 1-2 zucchini
  • 2 celery stalks
  • 1 quartof vegetable stock
  • sea salt and pepper

Directions:

  1. Wash and chop all veggies. 
  2. Lightly heat the oil on low heat. Add leeks and garlic and slowly cook. 
  3. Add the vegetable stock and vegetables (zucchini, kale, broccoli, celery), and slowly bring to a boil and cook until the zucchini is soft.  The less you cook the vegetables the better.
  4. Add salt and pepper to taste. 
  5. Use a stick/immersion blender, or transfer to a blender, and process the soup. Blend to desired consistency, from smooth to chunky. 

Now….I admit, the stuff looks green, but it’s good!!!  Kinda like Broccoli Cheese Soup without the cheese!  🙂

Here’s the recipe for the second soup I made….Tomato Soup!

Tomato Soup

This recipe makes 4 servings

  • 10 Roma Tomatoes cut into small pieces
  • 1 White Onion, chopped
  • 2 Cloves of Garlic, chopped
  • 6 tbsp of Olive Oil
  • Sea Salt and Black Pepper

Directions:

  1. Preheat oven to 375 degrees
  2. Place chopped tomatoes in a Pyrex baking dish (13 x 9)
  3. Mix in Onion and Garlic
  4. Salt and Pepper thoroughly
  5. Drizzle olive oil over the mixture
  6. Bake in the oven for 45 minutes
  7. Remove from oven and allow dish to cool
  8. Scoop mixture into immersion blender or into a stock pot so that you can use a “boat motor” to blend it.
